Mom's Enchilada Casserole sauce: sauté 1 chopped onion in 1/4 cup olive oil add chopped parsley 1 can tomato paste 1 1/2 cup water 1 tsp vinegar 1/2 tsp oregano 1/2 tsp salt 1 tsp sugar 2 tsp chili powder preheat oven to 350° Brown 1 lb ground beef; add salt and pepper. Tear 12 corn tortillas into bite-size pieces. Mix tortillas, meat, sauce and 1 can halved black olives together Pour into 13 x 9" baking dish. Cover with Jack or Muenster cheese. Bake for 30 minutes.
