Mom's Date Pudding Beat 2 eggs Add 1 cup sugar Beat together well Add: 2 tbls flour 1 tsp baking powder 1 cup chopped walnuts 1 cup cut up dates 1 tsp vanilla Butter, then flour an 8-9" pie pan. Knock out excess flour. Pour in pudding. Bake 350° about 10-12 minutes or until pudding rises and begins to brown slightly. Remove from oven, stir and let settle a little. Bake another 10 minutes. Do not overcook. Cool slightly and spoon into dessert dishes. Let cool and serve with slightly sweetened whipped cream with about 1/2 tsp vanilla extract added.
