Mom's Cheesecake 1 1/4 cup graham cracker crumbs 1 tbls ground walnuts or almonds 2 tbls sugar 1 tsp grated lemon peel 1/2 cup melted butter Mix well. Press mixture firmly against the bottom of 9" spring form pan. Bake 350° 10 minutes 1 1/2 lbs cream cheese, softened 1 cup sugar 1 tsp vanilla 3 tsp lemon juice 1 tsp grated lemon peel 4 eggs Beat cream cheese in a mixer until creamy. Continue beating, adding sugar gradually, then vanilla, lemon juice and lemon peel. Add eggs, one at a time, then beat for 10 minutes until fluffy. Pour into spring form pan. Bake 250° 50 minutes. Turn off heat and let cool in the oven for 30 minutes with door open. 1 pint ice cold sour cream 1/2 cup sugar 1/2 tsp vanilla Combine sour cream, sugar and vanilla. Whip 10 minutes until foamy. Spoon over top of cake. Bake 250° 10 minutes Sprinkle with cinnamon. Cool in fridge for a few hours or overnight. Can be frozen.
